A Mr. P Birthday Cake

This week we celebrated Mr. P's birthday in a British style. We added a Canadian twist with his favourite bevy for dinner- a Caesar (like a Blood Mary, except with Clamato juice) but the rest was completely British. I tried to make it as authentic as I could.

For our main course we had Bangers and Mash. They were a huge hit and Mr. P was elated! So for his birthday cake, rather than having a traditional chocolate or vanilla sponge, I made him one of his favourites- Sticky Toffee Pudding.

Now, it isn't really what we North Americans know to be as pudding. Pudding is a term used in the U.K. that also means dessert. Just like "tea" is your dinner and "dinner" is your lunch! It can be quite confusing sometimes.

So, with that, I give you- Mrs. P's Sticky Toffee Pudding

You'll Need:

9 oz of chopped dates (Note- if you do it yourself, don't forget to remove the pits) 
1.5 cups of water
1/3 cup butter
1 cup firmly packed brown sugar
4 tsp vanilla
2 eggs
3 tbsp dark treacle
4 tbsp golden corn syrup
1 2/3 cups of all purpose flour 
1.5 tsp baking powder 
1 tsp baking soda

Please note: Dark Treacle Can be purchased at your local British Food Shops. However, you can substitute for molasses.
Method: 

Boil chopped dates with water and let stand for 10-15 minutes once boiled.

Cream together the vanilla butter and brown sugar 





Add eggs and mix further until blended. 

Add treacle and syrup 



Sift the baking powder and flour together 

Add to wet mixture gradually and allow for each bit to mix in



Purée the date mixture (I used my blender to do this part) 

Once puréed add the baking soda and blend further 

Add the date mixture into the other ingredients 
(Add immediately while it's still warm) 



Pour mixture into muffin tins (I used a 12 cup muffin pan)





Bake at 350 f for 20-25 minutes





For the sauce: 
1/2 cup of whipping cream 
1/4 cup butter
1/4 cup of packed brown sugar
1 tsp treacle 
1 tsp golden syrup 
3 tsp vanilla extract 




Add all ingredients a pot and bring to a slow boil stirring items as they blend together. 



Serve the puddings warm and you can top
With custard or ice cream!


So there you have it, your own cute and petite sticky toffee puddings. 

Mr. P's comments: "Excellent. It tastes just like sticky toffee pudding. I don't like doing this, I never know what to say" (At least he's honest, folks)
