Chicken Devan... More Like Chicken Devine!

Happy Friday and more importantly Happy St. Paddy's Day to you all celebrating. May tomorrow bring good heads and health to you all.

Today we celebrated Little P's first St. Paddy's Day in style by wearing green and watching The Wiggles practice their Irish Jig.

This is a late post from yesterday. I promise I have the ability to cook dishes other than chicken. For some reason, it's been a chicken kind of week in our house. Last night made no exception and I made an "oldie but a goodie" dish for my family, Chicken Devan.

Chicken Devan is a traditional dish to me, in the sense that every time I eat it I imagine myself in a scene from Pleasantville ( I highly recommend it if you haven't seen this 90s hit, it's great!) eating my 1950's dinner. It reminds me of the dinners my parents would describe eating as children growing up in their homes. Perhaps this is the case as it something my Aunts make as well as my mother, taught by their mother I would imagine.

So, in typical Mrs. P style, I decided not to follow the recipe thoroughly and add my own spin on the classic dish:

Ingredients:

6-8 Chicken Breasts (modify depending on the number of people), diced
2 bags of frozen broccoli (we like our greens in this house), thawed & drained
2 cans of cream of broccoli soup
1.5 cups of sour cream
1 cup of mayo
1 bag of old cheddar cheese, shredded
1/2 cup of Tex Mex cheese ( I used Black Diamond taco cheese)
1 tsp of curry powder, mild (depending on your preference)
1 tbsp of garlic
salt & pepper to taste
4 tbsp of soft butter or margarine
3/4 cup of parmesan cheese
1/2 cup of crushed ritz crackers, potato chips or breadcrumbs ( I prefer breadcrumbs)

Method:
Preheat oven to 350 Fahrenheit

Place diced chicken into saucepan with water and boil.

While chicken is boiling mix the following:
2 cans of soup
mayo
sour cream
curry powder
garlic
 salt & pepper

 


Layer broccoli on the bottom of a 9 x 13 greased pan.


Next drain and add diced chicken on top of broccoli


Then pour sauce mixture over top of chicken and broccoli. Carefully mix together in the pan so it covers the bottom thoroughly.

Next mix the following in a bowl:

butter/ margarine 
Tex Mex cheese
parmesan cheese
remaining cheddar cheese 
breadcrumbs 

Then spread mixture on top of the broccoli, chicken and sauce


Bake for approximately 35-40 minutes and viola!


You can serve on it's own, with rice, potatoes or biscuits. 

Mr. P and my brother, Uncle P are fans of Red Lobster biscuits. If you haven't had them before I highly recommend them. You can find the mix at your local grocery store, though Costco has the best price. 

So there you have it, a classic dish with a bit of a twist and my kind of spice spin on it. 

Mr. P's corner: "It was VERY good, I liked it. It was VERY good! It's my new favourite chicken dish." 

Little P's corner: "Mum, Mum, Mum" translated to " I like broccoli"
