A Sunday Night Special

Hello Readers!

It's almost been a full year and a lot has happened:

1. I've returned home to Canada!
2. Mr. P and I have added an addition to our family, Little P
3. I have just started cooking again!

This blog is back by special request. A few people have asked me to post again as they are looking for more inspiration in the kitchen and new items to try.  So without further ado, I give you Mrs. Price's Plate, the sequel:

Tonight we had a classic meal that as a family we generally love but we don't have very often. It was extremely cold today so I felt it was best to mar something that was filling and would keep us warm, lasagne.

Turn on water to boil noodles (about 8 large sheets)

I started my sauce with browning some extra lean ground beef.
Next, I mixed it in with a jar of Prego sauce. If you want to make your own sauce I use the following:

1 can of crushed tomatoes
1 can of tomato paste
2 cloves of garlic
1/4 of an onion
Extra virgin olive oil
Salt and pepper
Italian spices
Wine (about 1/4 of a cup)

Pour oil into a frying pan and add onions and garlic
Add tomato ingredients
Bring to a simmer
Add Italian spices
Add wine and salt and pepper
Let sauce thicken for half hour.

While your sauce is simmering, I then create my cheese mixture:

2 containers of ricotta
1 bag of mozzarella
Some Parmesan
1 egg
1/2 container of cottage cheese

Mix together in a mixing bowl until items are stiff.

Add noodles to boiling water until they're tender.

Next I spoon a bit of sauce onto the bottom of my casserole dish 9 x 13

Layer two of the large noodles (4-5 smaller/regular) across the sauce.

Then add 1/2 of the cheese mixture

Then add the next layer of noodles and add 1/2 of your sauce.

Add your next layer of noodles.

Add the remaining cheese mixture and Parmesan cheese.

Add your next layer of noodles and remaining sauce.

Then add your remaining layer of noodles.

Sprinkle 1/2 bag of mozzarella and Parmesan cheese.

Bake for 35-40 minutes at 350 Fahrenheit.

Let stand for about 10-15 minutes to set and ready to cut.

Mr. P's corner: "Good, I would add more vegetables to it because it's what I like."

Little P: "mmmmm da-da-da-da" (translated to, "I like noodles")

Until next time, thanks for reading and I am back!

Happy cooking!
Mrs. P xx
